So I am going to introduce the recipe of “Gyokuro Dashi Chazuke”.

The Gyokuro Dashi Soup Stock we used this time, we also using in the Uji Chazuke Menu of Chaganju Café too. If you don’t know about what Uji Chazuke is, you can check this blog out→http://www.kyotoyamasan.jp/blog/531.html

 

Ingredients(For 1 person)

・Rice Ball  ・・・1

・Gyokuro Dashi Soup Stock・・・Proper amount  (通販ページ→http://www.803yamasan.jp/?pid=106305632)

・Soysauce ・・・For coating on both side of rice ball

・Chicken Tender ・・・Half Cut

・Green Onion ・・・As you like

・Beefsteak Plant ・・・As you like

・Pickled Plum  ・・・1

・Wasabi    ・・・As you like

Recipe

①Make a rice ball

②Use soysauce to coat on the both side of rice ball, then grill it

※Or you can mix the rice with soysace first then grill

③When grilling the rice ball, boil and cut off the chicken tender

Put chicken tender, green onion, beefsteak plant and pickled plum on the top of grilled rice ball

Lastly, pour the Gyokuro Dashi on the top. Chazuke is DONE.

The flavor of Beefsteak plant and pickled plum make you have good appetite! With chicken tender, you can well-balanced nutrition.

Gyokuro Dashi Soup Stock is make from Bonito, Kelp, Herring, Flying Fish, also Uji Gyokuro and Houji Roasted Greentea. It is convenient to use this and make different kinds of dishes. You must try making it at home!

I have learned about the method of making matcha greentea and the temperature for each type of tea when I visited to Hottaen.

Do you really know how to make matcha or using a tea pot to make tea?

I will introduce the method of making matcha and also how to use a tea pot to make greentea to all of you.

First, the method of making matcha

①Use bamboo tea scoop to measure 2 scoops of matcha greentea powder and place it into the tea bowl
②Put a little hot water into the tea bowl and mix with matcha powder

③Then fill 80 ℃ hot water into the tea bowl

④Hold the rim of tea bowl with one hand and use tea whisk and whisk the mathca in a W shape. ※Use the power of your whist, not arm

⑤Lastly, after the matcha has many tiny bubbles on the surface then you can rotate the tea whisk in 360 degree.

Second, the method of making Sencha greentea for 3 person

①Put Sencha tea leaves into Japanese tea pot

②Pour the hot water first into the tea bowl and wait until the temperature to decline to about 70-80℃ and then pour into the tea pot.

③Let the tea infuse and wait for about 1 minute

④Pour the tea into the tea cups, first pour a little into each cup alternately so the richer tea at the bottom of the pot will be distributed evenly between all cups. You can follow the picture below and try to pour the tea.

FINISH!

40℃ is the most suitabale temperature for Gyokuro Greentea and 70-80℃ is suit able for Sencha Greentea. If you want to enjoy a fresh taste, you could use the water with mild temperature to make  the tea

Although there are many kinds of bottle of greentea, I still think that the tea make from traditional Japanese tea pot is totally different. Let’s try to use tea pot and making tea at home!

參觀堀田園時,我學到了如何泡抹茶茶的合適溫度等等不同知識。

大家知道泡抹茶的方法和如何用小茶壺泡茶嗎?

 

現在年輕一代的家中大概很少會有小茶壺,不知道真正泡茶的人也應該多吧?

這次我會為大家介紹泡抹茶用小茶壺泡茶的方法

 

首先是泡抹茶

①用茶勺放2小茶匙抹茶粉在茶碗內

②然後倒入少許熱水,將抹茶粉和熱水簡單混在一起。※這樣的話抹茶粉會較容易溶解

③再倒入約80℃左右的熱水到茶碗內,熱水大概是茶碗的三分之一。

④輕輕按著茶碗,用茶刷快速地上下移動將抹茶粉和熱水混合 ※留意肩膀和手腕都不要太用力

⑤最後抹茶表面起了細細的泡沫,最後畫一個圈就可以把茶刷拿開。

抹茶的顏色很翠綠吧~

之後就介紹泡煎茶的方法(3人份量)

①放2茶匙茶葉到小茶壺內

②將煮好的熱水先倒在茶碗,等水溫到大約70~80℃就倒入小茶壺內

③把小茶壺蓋上,等1分鐘

④然後順序把茶倒入茶碗中。

參考下圖便可以清楚知道如何順序將茶倒進茶碗內。

玉露茶的話就用大約40℃(人體肌膚溫度)~60℃的熱水,而煎茶則用約70℃~80℃的熱水就可以。
